What Is A Busser In A Restaurant

A busser in a restaurant clears and cleans tables and sets up tables for the next customers. A busser also can be called "bus person," "busboy" or "busgirl" or "table busser." Sometimes, the job title is also spelled "buser." These generally are entry-level low-paying jobs that many people take to supplement other income or to provide extra cash while they are in high school or college. Bussing duties vary, depending on the size and style of the restaurant.


Combination Jobs


Some busser positions are combined with waiter or dishwasher, particularly in smaller restaurants and diners, although this also can be the case in casual supper clubs. Higher-end restaurants usually have separate duties for bussers and for wait staff.


Cleaning


The busser clears and wipes off tables and brings the china, glassware and silverware to the dishwashing area. He separates the different types of tableware and throws away paper items.


Setting Tables


The busser re-sets cleared tables with silverware, placemats and napkins.


Removing Single Items


Bussers continually scan the restaurant to see when customers finish with dishes or glasses that can then be taken to the dishwashing area.


Set-Up Work


They do set-up work such as filling condiment bottles and jars and rolling silverware in napkins.


Serving Beverages


Bussers often assist wait staff in serving water and coffee, and making sure these beverages are refilled.
