Copper
Copper conducts heat well. Heat supplied by a gas stove makes its way from the pan's bottom to its top, evenly cooking food inside. Despite their benefit, copper is heavier than other pan materials, like stainless steel, which can make it difficult to maneuver. Cast Iron
Cast iron pans are well suited for use on a gas stove because of their capacity to tolerate direct flame heat. Cast iron is a less expensive cookware option with individual pans costing $20 and up as of 2010. Although cast iron takes longer to heat than copper, cast iron generally maintains its heat, ensuring food cooks evenly. Place cast iron pans on a gas burner or in the oven. Since cast iron can rust, extra care must be taken when cleaning it. Completely dry the pan after cleaning to prevent corrosion.
